If India sourcing is how you fill pulse programs for retail, wholesale, or foodservice, the risk is not only the mill. It is the steel box. Pulses that left a packing floor in Madhya Pradesh, Maharashtra, or Rajasthan can arrive in Houston, Felixstowe, or Jebel Ali stained, caked, or mouldy because warm, humid air from an Indian port condensed on cold container steel and dripped onto the cargo. That drip is container rain. It is ordinary physics, and it is one of the fastest ways to lose a food lot.

You do not solve it by shaving the freight rate. You solve it with a dry start, a hermetic polyethylene liner fitted to the container, and a desiccant plan sized to the route. Those three things belong in quality control and export logistics, not in a packing note written after the vessel has sailed.

What container rain is, in plain terms

A shipping container is a metal envelope. It heats and cools faster than bags of chickpeas, tur, moong, urad, masoor, or rajma sitting inside it. Stuff the box in a humid coastal yard, trap that air in the headspace, then sail into cooler ocean air. Roof and wall temperatures fall below the dew point. Water forms on the steel. It drips. The top layer of bags takes the hit first.

This is not rare on India-origin lanes. Ports such as Nhava Sheva, Mundra, and Chennai load in tropical humidity. Many destinations sit in temperate weather. Deck stow adds day-night swings. The cargo is hygroscopic, which means it exchanges moisture with the air around it. Even a lot that looked dry at stuffing can feed condensation later if residual moisture and headspace humidity are left unmanaged.

A winter voyage model for bagged cocoa beans (another hygroscopic agricultural cargo) predicted about 15.4 kg of cumulative container rain on a 14-day run from West Africa to northern Europe, with most of that water arriving in the second week as roof temperatures dropped. The useful lesson for pulses is not the cocoa number. It is the pattern. Condensation often concentrates late in the voyage, when you are no longer standing in the yard, and it can appear even when moisture looks microbiologically acceptable at origin.

That is why supplier verification has to include stuffing conditions, not only a factory brochure. Moisture at bagging, a dry container, and whether anyone loaded after rain decide whether you receive food or a claim.

Why bulk pulses are a high-risk cargo on Indian export lanes

Pulses packed in jute or PP bags sit in a closed steel volume for weeks. They hold and release water. Humidity that feels normal in an Indian warehouse becomes mould on the top tier once the roof starts raining inside the box. For food-grade lots, the loss is not only weight. Buyers reject for musty odour, clumping, staining, and microbial risk. In grains and similar dry foods, wet microclimates are also the conditions that let aflatoxin-producing moulds get a foothold.

Hermetic PE liners: the vapour barrier you actually need

A PE (polyethylene) container liner is a large, custom-fitted bag that lines a standard 20-foot or 40-foot box. You load the commodity into the liner, then seal it. Between your pulses and the steel is a closed film with a very low moisture vapour transmission rate. Water vapour does not pass through it easily. The cargo sits in a more stable, enclosed environment instead of against bare metal that sweats.

For bulk pulses the liner does two jobs at once:

  • It stops roof condensate from dripping onto the product surface.
  • It keeps the lot off container walls, residual dust, and traces of previous cargo.

Film thickness typically runs from 100 microns to 250 microns or more. For most bulk grain and pulse shipments, 150-200 microns is a practical working range. Heavier product, longer ocean time, or rougher loading methods push you toward 200-250 microns for puncture resistance. Lighter film can make sense when weight and cost matter and handling is gentle. Match thickness to product weight, transit duration, and how you load. Do not copy one spec across every SKU.

Specify the liner before the booking, not after a complaint:

  • Thickness tied to commodity and voyage, not to whatever was in the shed
  • Food-grade certification for edible pulses
  • Accurate 20ft or 40ft dimensions so the film does not pool, wrinkle, or tear
  • Discharge spout design if you unload by gravity or pneumatic systems
  • Anti-static treatment only when dust or material behaviour requires it

A liner is not permission to stuff wet product. It traps the air you sealed in. If that air is humid and the pulses were packed above a safe moisture band, you have built a closed wet room. The liner works when the cargo is dry and the installation is correct.

On India-origin food lanes, a liner is also a contamination control tool. You are moving an edible commodity through a reused metal box. A fitted, sealed PE liner is a simple way to separate the two.

Desiccant allocation: starting numbers, then route data

Liners cut the volume of air that can condense on steel. Desiccants take residual vapour out of the headspace and any moisture the cargo still exchanges. On long tropical-to-temperate routes you want both. A liner without desiccant still leaves loading humidity inside. Desiccant without a barrier still fights a full box of wet air and dripping metal.

Calcium chloride units are the usual choice for long ocean voyages because they can hold around 300 percent of their own weight in moisture. Silica gel and calcium-chloride blends are used around food packaging when you want inert, non-leaking behaviour. For bagged food, hang high-capacity bags or poles, typically 1 kg to 2 kg units, along the walls and near the doors, where condensation concentrates. Do not leave them loose on top of bags.

Use these as starting points, then adjust with arrival evidence:

  • 20ft bagged dry commodity: about 4-8 units of 1-2 kg, or roughly 4-10 kg of high-absorption desiccant
  • 40ft: about 8-16 units, or roughly double the 20ft mass
  • Another common working range is 6-8 bags in a 20ft and 12-14 in a 40ft
  • Increase for monsoon stuffing, long voyages, and higher residual moisture
  • Do not cut the count because a quote looked cheaper

Hygroscopic cargo studies show condensation can still form at moisture contents that look safe on paper. Treat a lab moisture certificate as necessary, not as a free pass to skip desiccant on a winter arrival into northern Europe.

Desiccant also has a limit. It manages transit humidity. It will not dry pulses that were stuffed wet. If the lot is above the agreed moisture, reclean or condition it and retest. Sealing damp cargo is how you manufacture container rain.

A hybrid setup is what most careful operators run. The liner is the primary shield. Desiccant mops up vapour trapped during loading. High-performance liners also reduce the air volume the desiccant has to treat, which is why under-dosing is less tempting once the film is in place. On trans-equatorial routes, that combination is how you keep the internal air below the dew point instead of hoping the weather is kind.

Loading discipline that actually holds

Write this into the stuffing SOP. Then watch it happen.

  1. Confirm moisture content before bagging, against the buyer spec for that pulse.
  2. Use a clean, dry container. Check roof pinholes, door seals, and residual wetness. Reject a damp box.
  3. Keep pallets and dunnage dry. Wet wood is a moisture source you just sealed in.
  4. Do not load after rain or with wet bags.
  5. Fit the liner so it is taut and correctly dimensioned. Poor fit causes pooling, tearing, and gaps at the doors.
  6. Hang desiccants high, spaced as the maker specifies, with extra near the doors.
  7. Leave some airflow around the cargo block where the stow allows it.
  8. Seal the liner. Record lot, moisture, liner spec, desiccant count, and stuffing photos.

That sequence is quality control. Uninspected production runs and stuffing done by whoever was free that afternoon are how claims start. Dedicated on-the-ground checks exist so you are not relying on a photo sent after the vessel sailed.

Avoid the usual false comforts. A “dry looking” bag is not a moisture certificate. A container that “usually arrives fine” is not a plan for a monsoon week into a cold discharge port. Misleading lead time promises also hurt here, because rushed close-out is when liners get fitted badly and desiccants get tossed on the floor.

Match the spec to Indian origin, not to a generic SOP

Stuffing in a humid coastal yard in September is not the same as a dry inland load in January. Deck versus under deck changes roof temperature. Container colour and headspace height change how much rain you get. You cannot copy one desiccant count across every SKU and every month and call it a supply chain India process.

For loose-fill pulses in a liner, thickness and puncture resistance dominate. For bagged pulses, placement of desiccant and protection of the top tier matter more. Kraft or poly sheets under the ceiling can intercept drips when a full liner is not used. Treat those sheets as a secondary shield, not as a substitute for a vapour barrier on high-risk food lanes.

If you are building a private label line of dal, chickpeas, or mixed pulses, put the moisture band in the purchase order and in the stuffing SOP. Custom product sourcing only works when the mill, the packer, and the yard share the same numbers. That is ordinary India sourcing work: mill, lab, liner vendor, and forwarder aligned, not three phone numbers on a spreadsheet and a hope that middleman price inflation bought you oversight. It did not.

Arrival checks that improve the next booking

On discharge, treat the container as data:

  • Inspect the ceiling for drip marks
  • Check how saturated the desiccant is
  • Smell and sample the top bags for mustiness or clumping
  • If you used indicating silica gel as a visual QC check, prefer cobalt-free orange grades near food packs
  • Feed those observations into the next desiccant count and liner thickness

The first shipment on a new lane is a calibration. Freeze a template only after you have seen the cargo, the desiccant, and the steel at destination.

What moisture content should pulses have before stuffing?

Stay inside the safe band for that pulse and the buyer’s written spec. Desiccant will not rescue wet cargo. If the lot is above the agreed moisture, do not stuff it. Condition or reclean, then retest.

Do I need a liner if I already hang desiccants?

On India-origin ocean moves into cooler markets, treat a hermetic liner as the primary vapour barrier for bulk and high-value bagged food. Desiccants then manage residual air. Using only hanging bags in an unlined steel box leaves you fighting container rain at the roof.

How many desiccant units go in a 20ft versus a 40ft?

Start around 4-8 kg-class units (or 4-10 kg total high-absorption product) in a 20ft and roughly double in a 40ft. Raise the count for monsoon, long voyages, and higher residual moisture. Confirm with arrival condition rather than repeating a round number forever.

Calcium chloride or silica gel?

Calcium chloride for long sea legs because of high capacity. Silica gel or non-leaking blends when units sit against food packaging and you want inert, predictable behaviour. Many operators use container-level calcium chloride plus a small indicating silica gel check for the receiver.
